Cozy Tomato Basil Soup

·

Canned tomatoes make the best soup in winter, and a little cream turns them velvety. I add a spoonful of tomato paste for depth.

Blend it right in the pot with an immersion blender and dinner is done in 35 minutes.

Cozy Tomato Basil Soup

Silky tomato soup with roasted garlic and plenty of basil. Dunk a grilled cheese sandwich in it for the full effect.

Ingredients

  • 2 tbsp olive oil
  • 1 onion chopped
  • 4 garlic cloves sliced
  • 2 tbsp tomato paste
  • 2 cans (28 oz each) whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 tsp sugar
  • 1 large handful basil leaves
  • 1/2 cup cream optional
  • Salt and pepper

Method

  1. Warm the oil in a large pot. Cook the onion for 5 minutes until soft. Add the garlic and tomato paste and cook for 2 minutes.
  2. Add the tomatoes, broth, sugar, salt and pepper. Simmer for 20 minutes.
  3. Add the basil, then blend until smooth.
  4. Stir in the cream. Taste and adjust the salt.
  5. Serve with olive oil and extra basil.

Notes

Freezes beautifully for up to 3 months. Leave out the cream if freezing.

Tips for success

  • Add the sugar to balance acidity. Taste before adding more.
  • A parmesan rind simmered in the pot adds savory depth.
