Cucumber Sandwiches with Herb Cream Cheese

·

These little sandwiches are proof that the simplest food can be the most satisfying. The cream cheese is whipped with chives and dill until fluffy.

Salt the cucumbers first. It pulls out water so the bread stays soft.
